Al igual que los guajolotes, las tulancingueñas son originarias de Tulancingo, sin embargo, su preparación es totalmente diferente pero igual de deliciosa. Las Tulancingueñas son una tortilla de maíz frita, doblada como quesadilla, rellenas de jamón, queso amarillo, queso oaxaca, jitomate, cebolla y crema. Sin duda suena un poco extraño, pero créenos, es simplemente imperdible.
